Provenance is the brainchild of Cathy Pavlos, a woman who – after practicing and teaching architecture for more than 20 years – has spent the last decade following her culinary passion by delivering European delicacies, rooted in her Italian heritage, to delighted diners in California’s Orange County. The patio of this new venue places patrons within the tranquil atmosphere of the restaurant’s seasonal garden, an environment that can now be enjoyed year-round with the help of Bromic’s Platinum Smart-Heat™ Gas heaters.
Cathy opened her first restaurant, LUCCA, in 2005; a one-of-a-kind ‘Euro Bistro’ specialising in charcuterie, cheese, wine and seasonal tasting dishes that highlight locally-grown organic produce. As executive chef, Cathy has been able to conflate her grandmother’s childhood tutelage in traditional Italian cuisine with lessons learned on regular restaurant retreats to Italy, France and Greece to create a remarkable repertoire of recipes that support a truly unique European dining experience with a distinctly Californian twist.
Over the past decade, LUCCA has become one of the best dining destinations in the region, and it is this success that has allowed Cathy to return to her roots whilst paying homage to her grandfather’s career as a commercial farmer in Huntington Beach through her newest venture, Provenance. Surrounded by a garden in which seasonal ingredients of the highest-quality are grown, Chef Pavlos crafts monthly menus that combine humanely-raised meats with in-house condiment creations and exotic produce grown on premises. Provenance has allowed Cathy to take her appreciation of exceptional ingredients to the next level, making it no surprise that her penchant for perfection reaches past the plate and into every aspect of her stunning second venue.
The 2,500ft2 restaurant, created by VANROOY Design , emits a contemporary farmhouse vibe that cohesively continues into the stunningly functional Native Soil Garden that surrounds it. It is understandably common for customers to request outdoor seating so that they may enjoy their meal in its place of provenance, but prior to the installation of a Bromic Heating solution, weather would often make this impractical.
“If the weather is nice, patrons mostly prefer to sit outside,” Cathy explains. “Since installing our Bromic Platinum Smart-Heat™ Gas heaters, we’ve definitely noticed an increase in the number of customers choosing to dine outside. It’s hard to say whether people are spending more time in our venue because of our Bromic heaters. I know that they will spend more time if they are comfortable, and the heaters certainly make it more comfortable. Either way; customers love them and even when it is 70°F, they prefer to have the heaters on!”
